Foodie Friday: Easy Glazed Carrots
This recipe is perfect when you need to throw together a meal for unexpected company—or when you simply want to add a little something special to an otherwise boring weeknight of faux meat and potatoes!
Easy Glazed Carrots
4-5 medium carrots, peeled and cut into 1/2-inch slices
1/2 tsp. sea salt
3/4 cup water or vegetable broth
1 Tbsp. olive oil
2 Tbsp. orange marmalade or apricot jam
- Combine the carrots, salt, and vegetable broth.
- Cook until the carrots are al dente. Drain off all the liquid.
- Add the olive oil and marmalade (or jam). Continue cooking until most of the liquid has evaporated.
- Garnish with chopped parsley, if desired.
Makes 6 servings
