Foodie Friday: Poached Pears
This is a simple dessert that is super easy to prepare and has just the right “sweet” factor. It’s a favorite in our house.
4 whole firm pears (peeled, cored, and cut in half lengthwise)
1 cup red wine
1 cup apple juice or pear juice
1/2 cup sugar
1 cinnamon stick
2 Tbsp. lemon juice
2-inch piece of vanilla bean (split in half, with the pods and seeds scraped into the mix)
4-6 cups water (enough to cover the pears)
Set the pears in a large pan and cover with the remaining ingredients. Bring to a boil. Reduce the heat to simmer and cover the pears until just tender for 15-25 minutes. Serve cold or warm.
