This pesto sauce is a great way to get some fresh greens into your diet, and it keeps in the fridge for a couple of days, so it’s perfect for throwing together a meal when your stomach is already rumbling! 1/2 cup toasted pine nuts
2 large garlic cloves, chopped (around 2 Tbsp.)
1 cup fresh basil leaves
3/4 cup olive oil
1/2 tsp. sea salt
1 tsp. lemon juice to preserve color (optional)

  • Combine the nuts, garlic, and basil in a blender.  
  • Drizzle the oil into the blender and pulse until smooth, scraping the sides occasionally.
  • Add salt and pulse until combined.

Makes 2 servings
