Foodie Friday: Chilled Peach and Almond Soup

 The words “fruit” and “soup” don’t usually go together, but don’t be fooled! When combined, they make a refreshing treat that’s also very filling.

Chilled Peach and Almond Soup

1 1/2 cups peeled and chopped fresh peaches (if they don’t taste sweet enough, add 1 tsp. sugar or agave syrup)

1/2 cup almond milk

1/2 tsp. lemon juice

1/8 tsp. almond extract

1/8 tsp. cinnamon

1/4 cup toasted slivered almonds

  • In a blender, process all the ingredients except the toasted almonds.
  • Chill in the refrigerator for 4 to 5 hours or overnight.
  • Serve with the toasted almonds sprinkled on top.

 Makes 4 servings
