Foodie Friday: Wheatberry Salad

This is a great side salad for any time of year. It’s delicious served beside veggie burgers or veggie dogs for summertime barbecues or next to a nut roast for special holidays.

For the Salad:
3 cups cooked soft wheatberries, cooled
1/2 cup cilantro, chopped
1/2 cup red onion, chopped
1/2 cup cooked or 1 can drained black beans
1/2 cup cooked edamame beans, shelled
1/2 cup red pepper

For the Dressing:
1/3 cup red wine vinegar
1/2 cup olive oil
1/2 tsp. sea salt
1/2 tsp. fresh ground black pepper
1/2 tsp. curry powder

  • Mix all the salad ingredients in a large bowl. 
  • Combine all the dressing ingredients.
  • Add the dressing to the salad and toss. 
  • Eat immediately or refrigerate for a couple of hours to let the flavors mingle.

Makes 6 servings
