Recipe: Fresh Mango Salsa

Serve this sweet, slightly spicy, and refreshing salsa at your next dinner party or barbecue. If mangoes or papayas aren’t available in your area, you can replace them with one 16-ounce can of crushed pineapple.

Fresh Mango or Papaya Salsa

2 medium or 4 small fresh mangos or papayas, peeled, seeded, and diced
Juice of 2 limes
1 red bell pepper, finely diced
1-2 jalapeño peppers, finely diced
1/4 cup olive oil or macadamia nut oil
3/4 cup finely chopped cilantro
1 cup finely chopped green onion
1/4 cup red wine vinegar
Salt and pepper, to taste

  • Combine all the ingredients in a bowl and toss. Refrigerate for at least 1 hour before serving.

Makes 8 servings
