Recipe: Fruit Pie

Fruit Pie
For the Pie Crust:
1 cup graham cracker crumbs
1¼ cup old fashion rolled oats
3 Tbsp. maple syrup (can also use agave as a substitute)
2 Tbsp. vegetable oil
½ tsp. vanilla extract
Oil
For the Filling:
6 cups fresh blueberries
¾ cup sugar or other sweetener
1½ Tbsp. cornstarch or arrowroot powder
¼ tsp. almond extract or 1 tsp. vanilla extract
½ tsp. cardamom or ¼ tsp. each cinnamon and nutmeg
or
6 cups fresh apples, peeled and sliced
1/3 cup raisins or dried cherries
½ cup sugar or other sweetener
1 tsp. lemon juice
½ tsp. vanilla extract
½ tsp. cinnamon
- Process all ingredients for the crust except the oil in a food processor for about 12 to 15 seconds, or until somewhat smooth.
- Press into a 10-inch springform pan or a pie plate oiled about 1½ inches up the sides.
- Mix the ingredients for one of the fillings and pour into the uncooked pie crust.
- If desired, make an extra half-recipe of the crust and crumble over the fruit.
- Bake at 350°F for 50 to 60 minutes.
