Recipe: Tropical Pineapple Salad

This simple, summery fruit salad is great served as a snack or appetizer or as a light and refreshing dessert at your next backyard barbecue.

1 ripe pineapple, quartered and sliced
1/4 cup toasted coconut
1/4 cup chopped and toasted macadamia nuts

  • Gently toss all ingredients in an attractive bowl.
  • Serve immediately or refrigerate for up to 2 hours.
