If you live in an area where you have access to vegan sour cream, you have got to try this dressing! Even if you are an avid salad hater, you’ll change your mind about leafy greens when they’re topped with this scrumptious dressing.
1/4 cup fresh-squeezed lime juice (if you’re making this for milder tastes, you can replace part or all of the lemon juice with fresh-squeezed orange juice)
Zest of 1 lime
1 Tbsp. red wine vinegar or rice vinegar
1 Tbsp. agave syrup or other sweetener
1 Tbsp. chopped chives or green onions
1/2 cup chopped cilantro
1/2 cup Tofutti sour cream
1 large or 2 medium cloves garlic, minced
Salt and pepper, to taste
1/2 cup olive oil or any light oil (not sesame oil)
- Blend all the ingredients together. This dressing can be made one day ahead of time.
Makes enough for one large salad
